Personally I'd stick the interior in the loft, you won't get a huge amount of money for it but if/when you come to sell the car it will make a massive difference to what you will get for it if it comes with an original interior.
Your new interior is what you want and to your taste, but I doubt it would be to many other peoples taste, and whatever way you look at it that planned interior seriously devalues your car, so do yourself a favour and stash the originals somewhere safe, because if you do sell them now, at some point in the future you will massively come to regret having got rid of them.
So, stash 'em and forget...for now!

the motor will never be returned to standard, front end is going to have a beam or tube axle. inner wings removed and a v6 buick engine fitted.
also pricing up for a full cage. so standard it will never be

Here's another idea that may work: Buy another Audax series car, possibly without an interior or with a damaged/scruffy/tastelessly coloured one, then fit that set of grey trim to the second car. Justifying this sort of buying is simple in the world of the old car nut as you can explain it away so: "But dear, I was only wanting somewhere to keep that spare interior dry."
Then you'd have twice the fun and could run a stock one as a daily. OK, maybe a stock one with a Sylvia Turbo engine or similar fitted.....
