The sensor in the head.
A stab in the dark maybe your sensor has gone wacko and a voltage increase is too much for it and it over reacts.
BTW. 81c is a bit low so try 85c. The fuel economy might be better. Note that the thermostat controls MINIMUM temp only.

At last the problem is solved, I adjusted my voltage control regulator . I was getting 15.6 volts from the Dynamo and adjusted it down to 14.2 volts . I started the car and still the temp gauge went up to the hot mark, So I bit the bullet and Bought another Temperature transmitter from a different supplier, when I fitted it the problem was instantly sorted. Just goes to prove that a lot of OE parts can be of poor quality, thanks for all the advice guys, I'm now a happy chappie again.

Glad to hear it's been sorted. Now you need to adjust the control box back to the correct value. Disconnect the A and A1 leads from the box and connect them together. Then adjust the regulator to 16 to 16.5 volts.

Maybe the "poor quality" sender was intended for the ten volt supply that the instruments would use where a stabiliser is present?
Either way, well done for getting to the bottom of this, now get out there and enjoy the car.

Thanks JPB, the car is in superb condition and has covered only 40K miles and is totally original. I have attended quite a few car shows throughout the summer, I won best sixties car in show at one very large event, I was well chuffed. Travelling around with the temp gauge near hot always was a worrying time but as you say its sorted now and time to enjoy again, thanks again for the great advice, stan
